Ever wonder how our honey makes it from a field of buzzing wings to your biscuit, toast, or straight-off-the-spoon situation? Around here, it’s all hive, no hype—just good, honest work from the bees, the beekeepers, and a whole lotta sticky days under the Nebraska sun.
Step 1: It Starts With the Bees (Bless ‘Em)
The real bosses of this operation are the bees. We keep over 25 bee yards across the region—each one placed with care in areas rich in wildflowers, clover, and all the good nectar stuff. We pick spots where the bees can thrive and stay healthy.
Brian and I both came into this honey life the hard-earned way—he’s a fourth-generation beekeeper, and I ran a honey gig down South before heading back to my Nebraska roots. Now we run this wild little farm together, chasing blooms and hauling boxes like it’s a sport.
Step 2: The Honey Flow (aka the Great Nebraska Hustle)
Nebraska’s honey season is short but mighty—just 4 to 6 weeks in the dead of summer when the bees are working overtime and the rest of us are trying not to melt. During this window, Brian’s loading up supers full of capped honey, and the truck’s usually stacked higher than common sense allows.
It’s sticky, it’s sweaty, it’s sweet. And it’s our favorite time of year.
Step 3: Spin It Real Good
Back at the Honey House, we fire up the retro gear. Our vintage Uncapper shaves off the wax cappings (with a satisfying buzz), and the honey gets spun out in our two 60-frame extractors. From there, it’s strained—not filtered—and never heated.
We keep all the good stuff right where it belongs: pollen, enzymes, minerals, flavor. No funny business.
While Brian’s muscling through extraction, I’m on cleanup, snack duty, or wrangling the next project. And during peak season, we’ve got a few trusty friends and family who show up to lend a hand. Payment usually includes tacos and a jar or two.
Step 4: Bottle It Up, Baby
Once the honey’s spun and settled, it gets stored in drums until bottling day. Bottling happens inside The Hive House—our certified facility tucked inside the original 100-year-old farmhouse. It’s where we label every jar, ship every order, and blast our favorite playlist while we work.
Whether it’s classic raw honey or one of our cheeky specialty blends, every jar gets filled with care—and maybe a little sass.
