AFTER HOURS

Issue No. 1 • August

For slow evenings and good company.

From the Beekeeper’s Kitchen

August might be my favorite contradiction.

The days are busy. Honey harvest is in full swing. The garden is producing faster than we can eat it.

But the evenings...

The evenings ask us to slow down.

This month, we're bringing what's growing straight to the table—a basket of heirloom tomatoes, fresh basil, burrata, crusty bread, and our newest obsession: Amaro Barrel Aged Honey.

Nothing complicated.

Just one really good August evening.

Welcome to the very first issue of After Hours.

I'm so glad you're here.

Amaro Barrel Aged Honey

The Mood
Windows open. Barefoot evenings. One more slice of bread.

Earlier Today...

Before supper ever made it to the table, dinner started in the garden.

A basket in one hand.

Tomatoes in every direction.

Basil that somehow smells even better in August.

This might be my favorite part of the meal.

The Pour

Every issue starts here.

One seasonal cocktail.

One easy pour.

One excuse to linger a little longer after the work is done.

This month, we're celebrating our new Amaro Barrel Aged Honey—bittersweet, citrusy, and made for slow August evenings.

Rich.

Bright.

A little unexpected.

Just like August.

Paper Plane

A modern classic with a Fat Head twist.

You'll Need

¾ oz Bourbon

¾ oz Aperol

¾ oz Amaro Nonino

¾ oz Fresh lemon juice

1 tsp Fat Head Amaro Barrel Aged Honey

Grapefruit twist, for garnish

To Make

Shake everything with ice until well chilled. Strain into a chilled coupe glass and garnish with a grapefruit twist.

The honey softens the bitter edges while letting the citrus and botanicals shine.

Or Keep It Simple...

Amaro Honey Sparkler

You'll Need

1 tsp Fat Head Amaro Barrel Aged Honey

Sparkling water

Ice

Fresh grapefruit wedge

Tiny pinch flaky sea salt (optional)

To Make

Stir the honey with a splash of warm water until dissolved. Fill your glass with ice, top with sparkling water, and finish with a squeeze of grapefruit. Add a tiny pinch of flaky salt if you're feeling fancy.

Simple.

Refreshing.

The kind of drink you'll make again tomorrow.

One Last Pour...

Honey isn't just for sweetness.

It rounds the edges, softens the bitterness, and somehow makes every ingredient taste a little more like itself.

Here's to lingering just a little longer this August.

The Bite

Peak-season tomatoes don't need much.

Just really good bread.

Creamy burrata.

Fresh basil.

Olive oil.

A little flaky salt.

And one drizzle of Amaro Honey.

The botanical bitterness from the barrel gives the tomatoes surprising depth without stealing the show.

Sometimes the best recipes are really just assembling good ingredients.

Pantry Spotlight

Amaro Barrel Aged Honey

Aged slowly in amaro barrels, this honey picks up subtle notes of bitter herbs, citrus peel and warm botanicals.

Unexpected on purpose.

We love it with...

• Burrata

• Aged cheeses

• Grilled peaches

• Citrus cocktails

• Vanilla ice cream

• Ricotta toast

Farm Notes

A few things happening around the farm this month...

🌻 The sunflowers finally decided to show off.

🐝 Honey harvest has officially taken over our schedule.

🍅 The tomatoes are winning the race against our ability to eat them.

🥒 Someone keeps leaving cucumbers on our porch. (We're not complaining.)

🐶 Huck has become convinced tomatoes are now his personal snack.

Worth Saving

A few little things making August sweeter...

• Vintage coupe glasses

• The little yellow speaker always playing in the kitchen

• Heirloom tomatoes still warm from the sun

• Fresh basil on everything

• Honey drizzled on the last bite

Around Our Table

Harvest season doesn't leave a lot of free evenings.

That's probably why these little ones matter so much.

Nothing fancy.

Just a simple meal.

Good company.

And a reminder that slowing down is worth making time for.

Last Bite

The dishes are stacked.

The cocktail glasses are nearly empty.

The windows are still open.

Summer won't last much longer...

...but tonight it still tastes like tomatoes, basil and honey.

We'll save you a seat…

Until Next Time…

Issue No. 2

A hint of cooler evenings.

Maybe apples.

Maybe bourbon.

Definitely honey.

See you after hours.
